寿司に使用されるマグロを始めとした寿司ネタ。
釣り上げられたマグロは解体され、板前さんのところに運ばれてきます。
そして部位ごとに捌くことに。
その手際は素晴らしいもので、動画でもご覧になれます。
熟練の職人技で磨き上げられた包丁捌きで大トロ、中トロ、赤身と捌くその姿はまさに職人。
ネタは部位ごとに切り分けられ、様々な料理へと使用されて行きます。
