The PR Video for "Chusen," a Traditional Japanese Dyeing Technique This video, titled "Chusen - Hand-dyeing technique (Japan)," produced by "IKIDANE NIPPON" features one of Japan's traditional dyeing techniques. "Chusen" is a traditional dyeing technique that originated in Sakai (堺市:Sakai-shi), Osaka in the early Edo Period. Chusen is also called "Sosogi-zome." Dyed textiles are used not only for rolls of cloth and clothing like Yukata, and Jinbei, but also for commonly used items like dish cloths or handkerchiefs. This video clip features the traditional dyeing technique Chusen. We hope you enjoy this rare footage! The Chusen Dyeing Technique Source :YouTube screenshot Chusen is a traditional dyeing technique whereby you dye each piece one by one, and requires highly skilled craftsmen to create perfect, even dyeing. First, place the material cloth on the board and apply anti-dye adhesive to the non-dyeing areas using patterned paper. (0:05). After the pastes are dried, set a frame to an area to be dyed (1:08) and pour the dye compounds onto the cloth. If cloths are dyed twice, in a distinct way, by layering them on top of each other by the bellows, a beautiful color will be produced, and the back side will have a vivid appearance. Dyed textures are washed with water and dried. You can see the completed product in the footage from 3:04. Chusen uses the same technique to dye yarns, therefore, it does not lose its elasticity and breath-ability. Let's Use Chusen Dyed Products Source :YouTube screenshot As you can see from this video clip, these traditional dyed products are made by hand, one by one. These Chusen products, with an air of Japanese culture, are very popular as souvenirs. Chusen products are available on online shopping sites. In recent years, MUJI has introduced a new line of chusen items that have attracted a lot of attention. If properly cared for, Chusen products will change into a beautiful color and can be used for a long time. We also recommend trying a Chusen experience class to see what Chusen dyeing is like. Summary of Chusen, the Traditional Hand Dyeing Technique Source :YouTube screenshot The footage from 3:11 features various Chusen products. Chusen has many different types of patterns such as such as small crests, stripes, chidori patterns, and floral patterns. There are also various techniques, such as using multiple dyeing compounds to make colors brighter, or discharge dyeing to make colors dark. There is another traditional dyeing method in Japan besides Chusen; it is called "Nattsen." Definitely check out some chusen products if you have the chance! 【Official Website】Tenukuri kobo |Tokyo Wasarasi Sozokan https://souzou-kan.info/en/ -

Kyo-Shikki - Traditional Japanese Lacquerware From Kyoto. Check Out the Awesome Techniques Used to Create the Simple Yet Elegant, Deep Black Craft!

"Kyo-Shikki" and "Zohiki Natsume" - Traditional Japanese Craft Culture This video, titled "Zohiki Natsume Lacquering" (象彦なつめ塗り) was uploaded by Masao Kudo. It introduces how "Natsume" (棗), traditional Japanese lacquerware containers used during Japanese tea ceremony, are made. The video was taken at the Kyo-Shikki store "Zohiko" in Kyoto which has been in business for more than 350 years. As you watch the master craftsman at work throughout the video, you can learn more about the technical skills that have been passed down over the years that are so critical to preserving Japanese culture and traditional crafts. "natsume" are lidded containers used to store matcha tea used during traditional Japanese tea ceremony. In order to preserve the high quality of the tea, the natsume must be made in a way that leaves no gap between the main body of the container and the lid. Japanese lacquerware can be decorated using techniques such as Maki-e (蒔絵), however, the natsume you see in this video is simply covered in a coating of black lacquer, a simple yet beautiful finish that really shows off the skill of the craftsman. How are Zohiko's Natsume Made? Source :YouTube screenshot In this video, third generation lacquer craftsman of Zohiko, Keiko Nishimura (西村圭功), demonstrates the traditional craft of lacquering natsume. The video begins with the craftsman coating a container made of ultra thin Japanese zelkova (欅, keyaki) with a base coat of "Kiurushi" (生漆), which is the unrefined sap of the lacquer tree. This can be seen at 0:55 in the video. The brim of the container is covered with washi tape in a process called "Kamihari" (紙張り) which strengthens the edge. Sand, water and lacquer from Japan's Kyoto region are then mixed together and applied to the container in a step called "Jizuke" (地付け). The craftsman then moves on to perform "Kukuri" (ククリ), a technique characteristic of Zohiko's Natsume. "Kukuri" is a process which involves combining powdered sharpening stone and lacquer, referred to as "Sabi," and then applying the mixture to the corners of the container and lid. The edges are then polished to produce a smooth finish and ensure that the lid and body of the container fit together perfectly. This is shown at 2:20 in the video. The lacquer is strained through a filter to ensure it contains no impurities before moving on to the "Nakanuri" (中塗り), Nakanuritogi" (中塗り研ぎ) and "Uwanuri" (上塗り) steps. The natsume are then placed in a "Furo" (a space with a high level of humidity) to dry, after which the Zohiko Natsume is complete. You'll be amazed at the number of steps and high level of skill involved in making these simple-looking, black lacquer coated natsume tea containers. Preserving Japanese Culture Through Kyo-Shikki Lacquerware Source :YouTube screenshot Zohiko, which has inherited the culture of Kyo-Shikki lacquerware, offers a wide variety of products, from "Suzuribako" (硯箱) and "Temotobako" (手許箱, small storage boxes) that are more like works of art than traditional crafts, to "Jubako" (重箱) and "Zoni-wan" (雑煮椀) bowls used for New Year's, "Marubon" (丸盆) and "Yohobon" (四方盆) that are essential to Japan's hospitality culture and daily life, and trays and plates with modern designs that can be used for everyday purposes. There are also many luxury items decorated with gold and silver available for purchase as well. Gold or silver powder is sprinkled on top of a lacquer design before it completely dries, a technique called "Maki-e," which gives the lacquerware a beautiful finish. Summary of Zohiko Natsume Source :YouTube screenshot Lacquerware is a traditional Japanese craft and if properly stored and maintaned, items can last for generations. Zohiki's natsume are a great example of Japan's "Kyo-Shikki" lacquerware culture and demonstrates the amazing talent of lacquerware craftsmen. We highly recommend experiencing the beauty of Kyoto's lacquerware first hand! 【Official Website】Kyo-Shikki Zohiko - Zohiko Lacquerware Art – https://www.zohiko.co.jp/global/en/ -

Obori Soma Ware This article's video, “Obori Soma ware, Fukushima Prefecture” (福島県 大堀相馬焼(おおぼりそうまやき)), was created by "Tohoku STANDARD." The men introduced in the video are Manabu Kondo, a craftsman from the craftsman shop "Obori Somayaki Toukichirougama," located in Iwaki, Fukushima, in Japan's Tohoku region, and his son Takashi Kondo. They talk about how they feel about Obori Soma ware, aka Soma ware, in the interview. The Traditional Japanese Craft "Soma Ware" Source :YouTube screenshot As Manabu Kondo explains in the video around 0:08, the traditional art and craft, Soma ware, was born in Obori, Namie town and has a history that dates back more than 300 years. When Obori, Namie was under the control of the "Soma Domain," they protected and fostered pottery making, and by the end of the Edo period (1603-1868), more than 100 kilns were running, making Obori, Namie the largest pottery production area in the Tohoku region. Soma ware was designated as a traditional craft in 1978. Soma ware was loved by many people for a long period. However, the Fukushima No. 1 nuclear disaster caused by the Great East Japan Earthquake on March 11th in 2011, severely affected the industry in Namie, and all craftsmen were forced to leave their shops. Now each craftsman shop is making efforts to rebuild the region and their workshops to keep the traditional craft alive. Source :YouTube screenshot In the video around 1:19, Manabu Kondo says "The importance of a tradition is having the spirit to pass it on to the next generation." The traditional skill has generally been passed down from father to son, but because there are some younger people from outside of the prefecture who are eager to learn the traditional skill, the traditional craft is expected to continue into the future. In Fukushima Prefecture, the "Fukushima Prefecture Community Development Support Team" is also recruiting people to take over the traditional industries that have been passed down from generation to generation in the region. At present, famous pottery shops such as "Obori Soma Pottery Cooperative," "Matsunaga Pottery Shop" in Nishishirakawa, "Ikariya-Shoten" in Shirakawa, and "Totoku" in Namie, are back in business in Fukushima prefecture. The Obori Soma Pottery Cooperative also offers a pottery trial/class. How Soma Ware is Made Source :YouTube screenshot Around 2:14, the video shows how Soma ware is made. The clay used to create Soma ware is "Obori clay" and "Kashima clay." They use a potter’s wheel to shape the clay and use a "Noborigama" (chambered climbing kiln) to complete the pottery. The unique feature of Soma ware is its "blue cracks," which is a pattern of cracks spread across the entire surface of the pottery. These blue cracks are created by applying two or more different types of glazes and exploiting the differences in their thermal expansion. In addition, Soma ware has a double-layered structure, which has the advantage of keeping the temperature of its contents, while being able to be held even when filled with scalding hot tea. It is ceramic, making it microwave-safe. Recap of Soma Ware Source :YouTube screenshot If you find yourself interested in Soma ware, consider buying some! It makes for a great souvenir or gift. Soma ware is also available at online retailers such as Rakuten or Amazon. They have a variety of potteries such as "Yunomi" (Japanese style tea cups), mugs, large dinner plates, small dinner plates, bowls, tumblers, vases, teapots, and even packages combining these items. Official Olympic products with the 2020 Tokyo Olympics logo are also available. They are also available at the fashion brand store "BEAMS." We hope you enjoyed learning about Soma ware. Be sure to check out the video if you still haven't yet! 【Official Website】Obori Soma Pottery Cooperative http://www.somayaki.or.jp/ -

和食の一つである精進料理を紹介する動画 こちら「Master Chef Hiroki Abe Earned a Michelin Star for His Shojin Ryori Menu — Omakase」は、日本食の精進料理について紹介をしている動画です。

Its taste and aroma have attracted a great deal of attention in the world of gourmet cooking. Katakami Soy Sauce is a long-established soy sauce brewery founded in 1931. In a quiet village at the foot of the mountain, soybeans from Nara prefecture are used as the main raw ingredient, and craftsmen have handed down the traditional Japanese method of making soy sauce, which involves fermenting and aging soy beans in a large tub made of cedar. Of course, the soy sauce is additive-free and unadjusted, so it would not be possible to produce without the skills of skilled craftsmen. Wheat is roasted until it is charred and then crushed roughly with a pestle. 2. Soybeans are soaked in water overnight and then boiled in a kettle. 3. The soybean broth is discarded and the remains are combined with roasted and crushed wheat. 4. Koji mold is mixed in and left in a room kept at 30 degrees for approximately 3 days (Video: 3:35 ~] - From here, a container is filled with the mixture in a mountain shape to keep it warm, and when self-heating begins, it is flattened to dissipate heat. - It's important to be careful with temperature control as the activity of koji mold will stop when the temperature rises above 40 degrees Celsius. 5. When the mixture has a green tinge, it is soaked in salt water. 6. The mixture is prepared at a ratio of soybean 1, wheat 1, 20% salt water 3. 7. The mixture is stored in a cool place, with the whole vat being stirred once every 3 days and being left to ferment for about 2 months. 8. The mixture is aged for 6 months to 1 year (brewing). 9. The liquid is warmed to approximately 70 degrees and sterilized (heat is applied and the production of moromi (unrefined soy-sauce) is complete) 10. It is then spread on a clean cloth, folded, and pressure is applied and it is slowly squeezed out (Video: 4:00 ~] 11. After that they bottle it and it's done! Traditional Japanese Gourmet!

"Tsukiji" - A Central Wholesale Market in Tokyo This video, titled "The Tuna King Reigns at Tsukiji Fish Market — Omakase Japan," was uploaded by "Eater." The video is an interview with Yukitaka Yamaguchi, a middle man wholesaler specializing in tuna, an important ingredient in Japanese food. He has a shop in Tsukiji Market, a central wholesale market in Tokyo. You can see him dressing a tuna and the beautiful, glossy cut of the tuna in this video. Tsukiji Market was opened in Tokyo in 1935 and it is one of the oldest comprehensive markets in Japan and one of the largest in the world in terms of seafood volume making it an important base for supporting Japanese food. Unfortunately, due to deterioration, the market was moved to "Toyosu Market" in October 2018. Tsukiji Market will be closed in the future, but the restaurants outside the market where you can eat fresh Japanese food still remain. They are very popular, especially among the tourists. This video was taken when Tsukiji Market was still open. An Intermediate Wholesaler Specializing In Tuna at Tsukiji Market Photo:Tsukiji Outer Market Yukitaka Yamaguchi is an intermediate wholesaler specializing in tuna, mainly bluefin tuna. Middlemen like Yamaguchi purchase tuna by participating in tuna auctions, and then sell it to retailers and restaurants. He is a particularly picky about the tenderness of the tuna used for sushi. He is a professional connoisseur who takes responsibility for his tuna and aims to be the best tuna seller in Tsukiji. He's introduced at 0:12 in the video. Tuna, A Valuable Ingredient in Japanese Cuisine Photo:Tuna In the past, red meat, called "zuke" in Japanese, was eaten and toro, a luxury food item today, was thrown out. It was not until sushi became available for the common people that sashimi toro came to be favored. Yukitaka Yamaguchi explains this from 0:44 in the video. His store sells five types of tuna: bluefin tuna, bigeyed tuna, yellowfin tuna, broadbill swordfish, and striped marlin. Yamaguchi purchases huge amounts of tuna to distribute to around 1,000 restaurants, mainly restaurants specializing in Japanese cuisine. He selects each tuna according to the cuisine it will be used for. Many restaurants rely on him as a tuna middleman to keep their business running smoothly. Summary of Tsukiji Market's Tuna King Photo:Tuna Yamaguchi says that the most exciting part of tuna is when he cuts in, because he cannot tell if it is a good tuna until he dress it. He gets really excited when he buys expensive tuna. Yamaguchi feels that tuna caught in fixed nets around Sado Island (佐渡島, Sado Shima) in the Sea of Japan in April and May, when the fat content is well-balanced, tastes the best, but he says that of the tens of thousands of tuna he handles, only about 100 per year are truly good, and they are rare. Because Yukitaka Yamaguchi loves tuna, he has been studying tuna and supporting the Japanese food culture of eating it! 【Tripadvisor】Toyosu Market https://www.tripadvisor.com/Attraction_Review-g14134359-d15216764-Reviews-Toyosu_Market-Toyosu_Koto_Tokyo_Tokyo_Prefecture_Kanto.html -

Sanuki Kagari Temari! This time, we'll be taking a look at the video "Sanuki Kagari Temari" (讃岐かがり手まり) released by "Japan Video Topics," that introduces Sanuki Kagari Temari. Sanuki Kagari Temari is a traditional handicraft that has been made in Takamatsu, Kagawa, in Japan's Shikoku region (四国地方, Shikoku-Chiho), for many years. With its elegant patterns, Sanuki Kagari Temari has been popular as a trinket for women and children. Edo Moku-Chokoku Wood Carving - A Traditional Craft of Tokyo This video, titled "Edo Wood Carving ❖ Traditional Japanese Crafts [NipponTsuTV]" (江戸木彫刻❖日本の伝統工芸【日本通tv】), was created by "NipponTsuTV." From 0:24 in the video, we see an interview with Kishimoto Tadao (Goto Masahiro). Kishimoto is a third-generation craftsman of the Goto style of Edo Moku-Chokoku wood carving. Having served as a representative advisor of the Japan Woodcraft Association, he is a well-known name in the world of Edo Moku-Chokoku wood carving. His work includes the carvings on the Main Gate of Naritasan Shinshoji Temple (成田山新勝寺総門), as well as cultural works in sites such as the Ryogoku Kokugikan (両国国技館). These have earned him a Medal with Yellow Ribbon. Kishimoto Tadao’s beautiful sculptures can be seen from 1:10 and 17:23 in the video. Creating Edo Moku-Chokoku Wood Carvings Source :YouTube screenshot Traditionally, zelkova, cherry, and cypress wood are used for the sculptures. To match the intended design, a sketch is carved into the wood using a saw. Following that, using a chisel and a mallet, excess parts of the wood are chipped away. This process is called "arabori" (荒彫り, rough carving). In the video, Kishimoto is in the "fine carving" (中彫り, nakabori) stage. During this stage, the pattern is further developed using a chisel and carving knife. Intricate details are carved with the utmost care to create an exquisite product. There are various types of chisels and carving knives, and the craftsmen skillfully make use of 200-300 types. Other woodworking tools such as planes are used as well. Kishimoto treasures his tools to the utmost, and never neglects their care. This dedication of the craftsmen is what protects the tradition of Edo Moku-Chokoku wood carving. The History of Edo Moku-Chokoku Wood Carving Photo:Nikko Toshogu Shrine in Tochigi Prefecture, a World Heritage Site Edo Moku-Chokoku wood carving dates back to Edo Period Japan (1603-1868), when the Tokugawa Shogunate was at the height of its power. Distinguished craftsmen from all over Japan gathered in Edo as part of their official attendance service They competed to best one another in terms of skill, and thus, Edo Moku-Chokoku wood carving was born. Yomei Gate at Nikko Toshogu Shrine (日光東照宮の陽明門), a World Heritage Site, is a masterpiece created through the combined efforts of these craftsmen. Eventually, from among the carpenters who carved as part of their service, "domiya horishi" (堂宮彫師) and "shaji chokokushi" (社寺彫刻師) who specialized in the carving of temples and shrines, emerged. In contrast to Buddhist masters who used chisels and small knives to carve Buddhist statues, these craftsmen developed a way of carving that didn't require the use of small knives. This led to the development of Edo Moku-Chokoku wood carving. Their works include architectural carvings, parade floats, and portable shrines. You can also see the works of Edo Moku-Chokoku wood carving at the shrines and temples that are also Cultural Properties of Japan. During the Meiji Period (1868-1912), besides traditional Japanese methods, craftsmen began exploring Western forms of carving and sculpting. There are actually Edo Moku-Chokoku carvings in the interior of the Western-style National Diet Building Kishimoto Tadao was involved in this as well, creating a fusion of Japanese and Western culture. In the video, Kishimoto states, "Doing my job and making customers happy. That's what makes it all worth the effort."
