The Yatsuba Dam in Gunma Prefecture This video shows concrete being poured at the Yotsuba Damn in Gunma Prefecture. "Tea Whisk Eggplant") is a common eggplant decorations used in Japanese dishes. It's difficult to find Japanese cooking recipes directly from Japan, but this chef shows in detail how to cut, and season small eggplants. Even if you can't understand Japanese, the video is easy to follow, and we'll also have a step-by-step guide below. You're sure to get hang of it in no time! Be sure to follow along with the video. Japanese Eggplants vs. Other Eggplants The Japanese word for eggplant is "nasu" (茄子). Compared to eggplants in other parts of the world, which are often round and have a harder skin, Japanese eggplants are characterized by their long, slender body and dark purple coloring. Japanese eggplants are similar to American eggplants in color, but are quite different than say, Chinese eggplants, which have a much lighter color. Remove all of the eggplants from the oil and remove the excess oil to the best of your ability. Simmer the Eggplants in Warishita Sauce and Cool Them to Complete Photo:Warishita sauce Simmer the fried eggplants with warishita sauce prepared with the following ratio. Warishita Sauce: Dashi 5:Soy sauce 1:Mirin (cooking sake) 1:Sugar a pinch Simmer the eggplants in warishita sauce about one minute. Then, cover the pan with parchment paper and let them cool for about 30 minutes to let the flavor sink in. Finally, remove the eggplants from the pan. Marunasu and Beinasu, which are round in shape, are recommended for Miso Dengaku (a dish in which tofu, vegetables, etc. are skewered, grilled, and coated with a miso glaze) because of their tender flesh. Another famous eggplant is Mizunasu. This variety of eggplant is cultivated in southern Osaka. Their skin is thin and soft so they can be eaten raw, and they are known to be sweet and juicy. In addition, there are eggplants with a green skin called Aonasu and even a variety of eggplant called Shironasu, which has white skin. Local beer, wine, whiskey, and gin were also on display at the event. After finishing my work, I enjoyed some drinks along with some delicious delicacies of Niigata! And a bit more sake... Delicious Niigata Delicacies at Food and Beverage Booths at Cool Japan EXPO in NIIGATA The food and beverage booths were lined with shops offering hegi soba, Italian cuisine, ramen, and more. All of the shops attracted many customers, who were eager to taste the delicious flavors of Niigata. I enjoyed a bowl of rice topped with half-cooked salmon roe and totomame-don from Sushi Tokiwa! This was sooo good! The salmon roe totally melts in your mouth. I've never had such a delicious salmon roe bowl before, and I'm not exaggerating! On the second day, I tried a delicious bowl of ramen from the ramen restaurant Suzu to Rin (鈴と凛) topped with mouthwatering slice of char siu. I had a chance to talk with many of the exhibitors, and although everyone was from a different field, they all shared the same desire to inform more people about the products, goods, and cultures that they have proudly developed. It was chilly in Niigata as it's nearing winter, but the venue was nice and warm! It was such an awesome two-day event. On a final note, here are some photos from the event that I couldn't cover in this article. I Also Enjoyed Sightseeing in Niigata and Some Delicious Local Fish! In between work, I had a chance to do a little sightseeing and enjoy some delicious local fish. This was my first visit to Niigata, so everything during these two days was fresh and exciting! Niigata is all about sake and fish, so I decided to enjoy some delicious sushi and sake! I couldn't get enough of the fresh, mouthwatering fish! I haven't been able to eat out much in the past few years due to the Coronavirus pandemic, but it was totally worth the wait! For lunch on the second day, I had a nodoguro-don (blackthroat seaperch over rice) at Sushi Marui in Niigata City. The bowl of rice topped with a generous helping of seared seaperch was a flavor you could never experience in Tokyo! I highly recommend trying it if you visit Niigata. When I went for a leisurely drive in Niigata City, I stopped by the Sea of Japan, where I was able to see Sado Island in the distance because the weather was so nice. On the way home, I saw many people visiting Niigata Gokoku Shrine for Shichi-Go-San. Near the Cool Japan EXPO in NIIGATA venue, there's also a photogenic "What's NiiGATA" monument! You can buy souvenirs at Minato Marche Pier Bandai! This is a good place to visit when sightseeing in Niigata, as you can enjoy shopping, as well as a variety of different restaurants. You can also buy fresh fish here. The new coronavirus has prevented me from traveling and sightseeing for nearly three years, but going on a trip like this allowed me to spend some much needed time away in an atmosphere far removed from my daily life. Although I was not able to do any "proper" sightseeing, I'm sure I'll be coming back to Niigata after seeing how much it has to offer. I'm definitely looking forward to it! -

Imizu City's Kamaboko This video, titled "Shinminato Kamaboko- Imizu City, Toyama" (新湊かまぼこ -富山県射水市- Shinminato Kamaboko -Imizushi,Toyama,Japan-), was produced by "_kashi77." It shows the manufacturing process of kamaboko (fish cake), a local specialty of former Shinminato, Imizu city, Toyama, in the Hokuriku region. Kamaboko is a kind of "kneaded paste product" that is made by making white fish meat into surimi (minced meat) and then kneading it. It's also a Japanese food used in New Year's dishes for New Year's celebrations. In this way, it is an indispensable and popular Japanese food. Cod, shark, golden threadfin, wrasse and other white fish are used as ingredients; however, "Shinminato Kamaboko" uses surimi made from tile fish to enhance the flavor of the minced meat. It's called "Kamaboko" when steamed, "chikuwa" when baked, and "satsuma-age (a type of tempura) when fried and eaten. The origin of the word kamaboko comes from wrapping the surimi around a bamboo stick in a tubular shape. Preparation Cut the raw fish into three pieces, removing the bones, innards, and skin. 2. Cut it up into smaller pieces Finely chop it with a knife. 3. It was also during this period that people began to build pit houses and settle in one place, and villages were established. In this way, the Jomon were able to use their wisdom to improve their lives. There are a number of exhibits on display that tell the story of life in the Jomon period, including pottery and other artifacts from the Jomon period. The threshed grains would be hulled in a stone mortar and then cooked into porridge using earthenware, and then the whole family would eat together in the pit dwelling. In addition to porridge, the Jomon also ate river fish, wild vegetables, walnuts, and dumplings. You can check out how the tools they used when cooking were made at 4:59 in the video. Jomon pottery was entirely hand made. First, the clay is kneaded and mixed with sand to make a dough, then the dough is piled to create a pattern without any gaps. Each piece was dried for 2-4 weeks before being baked over an open fire. So how were Jomon period tools made? You can see this process at 6:23 in the video. They used oval shaped stones to hit a smaller, flat stone to break of thin pieces that will be used to make the hoes. The hoe and other stone tools of the time are shaped the same way as modern hoes. Women's necklaces and other items were also excavated from various ruins. You can also see how people would have hunted with bows during the Jomon period. The Idojiri Archaeological Museum is an interesting spot to learn about the roots of Japanese people and the lifestyle of the Jomon people.
