Why Japanese Food Is Loved Around the World This video, titled "日本食ドキュメンタリー 江戸前穴子 Documentary of Japanese "ANAGO SUSHI" 日本美食记录-江户前穴子," introduces the splendor of Japanese food with a focus on Edomae anago (conger eel). In this video, Chef Eiichi Ueda, a sushi chef in Ginza, shows everything from purchasing ingredients to preparation and talks about his passion for Anago. The answer to why Japanese food is loved by so many people around the world may be found in this video. What Is Edomae Anago? Photo:Anago Sushi “Edo” is the old name for Tokyo and Anago was caught in what is now Tokyo bay which is in front of Edo. “Mae” means “in front of” in Japanese. The Edomae Anago absorbs nutrients from the river flowing into Tokyo Bay, and is considered a seafood gourmet that is a symbol of Edomae and is backed by history and culture. Eiichi Ueda, the sushi chef from Ginza, who is also the star of this video, was fascinated by anago, and says that when he purchases anago at Tsukiji fish market, he uses anago caught off the coast of Haneda in Tokyo Bay, and through this, we get an understanding of his dedication to his craft. A Commitment to the Art of Japanese Cuisine Source :YouTube screenshot One of the reasons why Japanese food is as popular as Western food around the world is because of its artisan's extraordinary attention to detail. In this video, Mr. Ueda mentions the significance of the process of buying fish from a trusted supplier, processing it himself, and cooking it using time-tested cooking methods. He is committed to cooking Edomae Anago, and the pride of being a craftsman of Japanese food, is the reason why Japanese food has become one of the most popular gourmet foods in the world today. The Merits of Japanese Food Source :YouTube screenshot The beauty of Japanese food lies in the preparation of each and every ingredient. The pride and responsibility to devote time, effort, and gratitude to every ingredient served to the customer, and to cook with the pride and responsibility of a craftsman is considered to be the essence of Japanese cuisine. They are also very particular about the way they prepare their rice and how to process and prepare fish. Chef Ueda, also says that cooking with gratitude for the ingredients is the only way to bring out the best in them and provide customers with the best food possible. A Heart-Warming Video Showing the Highlights of Hirayu Onsen Today we are showing you '平湯温泉PRムービー フルバージョン 5分21秒'. This promotional video shows you Hirayu Hot Spring located in the Okuhida hot springs area in Takayama City, in snowy Gifu Prefecture. In the video, Yuyu, the mascot of the local Tourist Association, will show you around all the top spots. Yuyu falls in love with a beautiful woman in the video (at 1:30). Let’s learn about sightseeing at Hirayu hot springs, while following what happens to Yuyu’s love! Hirayu Onsen: A White Monkey Showed Takeda's Army Where It Was? Find Out the Secret History of Hirayu Onsen! Source :YouTube screenshot The Okuhida Hot Springs area of Takayama City in Gifu Prefecture is famous in Japan for its plentiful snow. This hot spring area consists of the Fukuji Hot Springs, Shinhirayu Hot Springs, Tochio Hot Springs, Shinhodaka Hot Springs and the Hirayu Hot Spring, the oldest hot spring in Okuhida. Hirayu Onsen was established in the Age of Civil War called the Sengoku Period (1467~1615). They say that the hot spring was found when a white monkey showed the exhausted Takeda Army where the hot spring was. Takeda's men recovered immediately after getting into the hot spring. Following that, Hirayu Onsen was developed into a therapeutic spa. The spring is said to be effective at treating intestinal diseases, rheumatoid arthritis, nerve pain and skin disease. Having said that, the Okuhida Hot Spring area in Takayama City in Gifu Prefecture is surrounded by mountains and it used to be referred to as a "hidden world." A tunnel connecting Nagano Prefecture and Gifu Prefecture has opened in recent years, and access to the area has improved dramatically. As seen from 1:17 in the video, many coach buses from large Japanese cities such as Tokyo, Osaka, Kyoto and Nagoya arrive at Hirayu Onsen bus terminal. The bus routes are operated by the Nohi Bus, the local bus company covering most of the Hirayu Onsen area. This area is in a convenient location, as you can visit secret hot springs, camp sites and famous Japanese tourist spots such as Matsumoto and Kamikochi. Delicious Local Delicacies! Check Out the Delicious Foods Served in the Many Inns Shown Throughout the Video Photo:Hoba Miso Making a good choice of Onsen and meals is rather important when choosing a hotel or ryokan, is it not? Please have a look at 2:36 in the video. It shows unusual, delicious Japanese foods from the Hirayu Onsen area such as softshell turtle hot pot, onsen soft-boiled eggs, and pickled steaks. In particular, Hoba Miso is a very famous Japanese food in the Okuhida Hot Springs area in Takayama City in Gifu Prefecture. It is often included in the accommodation package of ryokan inns. We'd like to recommend Nakamurakan and Okada Ryokan for those who are particular about Onsen quality and want to fully enjoy the interior of a ryokan. The rotenburo (open air bath) at Nakamurakan uses hot spring water straight from the source and you can refresh your mind and body. You can see inside Okada Ryokan using Google maps street view as well if you're interested. Even if you don't stay at one of these inns, you can still use their onsen facilities with a day pass as well! Tourist Hot Spots at Hirayu Onsen, Japan’s No. 1 Onsen Photo:Asian Black bear There are many beautiful tourist hot spots and attractions besides Onsen Ryokan and hotels at Hirayu Onsen in Okuhida Hot Springs. Here, we'll tell you about popular tourist attractions around Hirayu Onsen. Okuhida Bear Ranch (奥飛騨クマ牧場 Okuhida Kuma Bokujo) shown in the video from 3:04 keep the largest number of Asian Black Bear (ツキノワグマ Tsukinowaguma) in Japan. We recommend the Bear Fat (熊の油 Kumanoyu) souvenir. It has been used as a medicine by hunters in the Okuhida Hot Springs area for many years and is effective for skin problems. Next up is the Shinhotaka Ropeway (新穂高ロープウェイ). There is a ropeway near Hirayu Onsen in Okuhida Hot Springs, Takayama City in Gifu Prefecture. It is the only double-decker ropeway in Japan. It is also famous for its magnificent views of autumn leaves. Its viewpoint has an elevation of 2,156 meters. -

(as of April, 2019) Echizen sits on the coast of the Sea of Japan and its roughly 2 and a half hours from Kyoto by car. There is no train or highways, so you can feel the beauty of the surrounding natural environment. We recommend going by car or rental car. Where's That Beach Shown in the Video? Photo:Kochou gate From 0:10 in the video, we see the main tourist attraction (with a beautiful view), Echizen Coast. Echizen coast is one of the three major places where bunch-flower daffodils are grown. Awaji Island (淡路島, Awajishima) and Boso Peninsula (房総半島, Bosohatou) are the other two areas. The bunch-flower daffodil is the city and prefecture flower. Echizen coast is a Quasi-National Parks, with upheaved seashore. Driving along the coast and seeing the large tunnel, eroded by wind and waves is very popular. Echizen cape was also chosen in the top 100 sunsets of Japan. Scuba diving at the beautiful Echizen coast is popular among tourists in summer. It can be seen at 0:28 in the video. Here, you can try diving and snorkeling as well, without the need for a license. There are a lot of sea-bathing places in Echizen with sandy beaches and rock shores. Families with children can enjoy endless fun here. Enjoy the Culture, Nature and Food of Echizen Source :YouTube screenshot If you head toward the inland from the Sea of Japan, you can see rural landscapes and beautiful green mountains. By visiting the Echizenkogama Museum, (越前古窯博物館, Echizenkogama hakubutsukan) you can learn about the history and techniques of Echizen ware, a Japan Heritage, as well as see one of the six ancient kilns of Japan. You can also enjoy 5 different kinds of hot springs here. The rice field art introduced at 1:09 is breathtaking. Definitely check it out! After sightseeing and enjoying some marine activities, we recommend trying local cuisine. Especially the Echizen soba, packed with grated Japanese radish, and fresh seafood. Usuya Shokuhin’s Ota Tofu is also popular as a souvenir. It uses only domestically grown soybeans. Usuya Shokuhin was established in 1854, in Echizen-cho Ota, which also happens to be the birthplace of Oda Nobunaga’s (one of the three great unifiers of Japan) clan. Another great thing to try during summer in Echizen is the squid-fishing experience. Riding on a fishing boat at night, turning on a fishing lamp and catching squid is sure to make for a lifelong memory. The food in Echizen can be seen from 1:12 in the video. Enjoying both sightseeing and delicious food on vacation... what more could you ask for? Traditional Japanese Festivals in Echizen Photo:Asahi festival Andon floats We highly recommend checking out Echizen's summer festival! In mid-July, “Echizen summer festival” is held. Fifty-thousand tourists visit the port town every year to see the amazing fireworks. “Asahi festival” is a fantastic festival where 20 Andon floats pass in front of the town hall. In Ota, there's a tradition called “Myoujin Bayashi” dedicated to “Tsurugi Shrine” (劔神社, Turugi jinjya) where Lord Oda Nobunaga worshipped. Currently, there is an event called “Ota Festival &O・TA・I・KO Hibike” in mid-August, where you can listen to powerful drum performances. The information is shown in the video at 2:00. The fireworks festival shown at 2:35 is incredibly lively. Summary of Echizen “JAPAN TRIP ECHIZEN COLORS – Summer/ Echizen-town Tourism Promotional Video” introduces tourist attractions in the summer, along with gorgeous views of Echizen. Echizen is a very attractive town where you can enjoy a gorgeous view of the Sea of Japan, marine activities, traditional festivals, fresh seafood, and more. Be sure to watch the video to see the beautiful summer views of Echizen. There are many hotels and hot springs too, so if you want to be active during summer, we highly recommend Echizen. 【Official website】Echizen town hall homepage https://www.town.echizen.fukui.jp/ 【Official website】Echizen: Echizen-town Tourism Federation https://www.town-echizen.jp/en/ -

Hyogo Prefecture's Beautiful Awaji Island! Check out the video "Awaji Island, Sightseeing Promotional Video #1" (淡路島 観光プロモーションビデオ #1). It was made by the Awaji Island Tourist Association. Awaji Island (淡路島 Awajishima) in Hyogo Prefecture in Japan's Kansai Region, is an island connecting Kobe City in Hyogo Prefecture and Naruto in Tokushima Prefecture in Japan's Shikoku Region. It is the largest island in the Setouchi Inland Sea (瀬戸内海 Setonaikai). The island, with a population of 130,000, the largest in the Seto Inland Sea, is overflowing with nature. Akashi Kaikyo Bridge on the Hyogo Prefecture side and Great Naruto Bridge on the Tokushima Prefecture side are popular tourist destinations with easy access. You can enjoy a refreshing drive over the sea by using these bridges. This video shows tourist attractions, nature, and the traditional culture of Awaji Island in just under 4 minutes. The History of Awaji Island Photo:Izanagi Shrine Approach Hyogo Prefecture's Awaji Island is described in the Kojiki (Record of Ancient Matters) as a special island, being the first piece of land created by the gods. The Nihon Shoki (Chronicles of Japan) also mentions the island in a creation myth where the God Izanagi and Goddess Izanami create the island. Izanagi Shrine, located on Awaji Island, is said to be the oldest shrine in Japan, and it is a very popular tourist destination. It's considered a power spot, and many people believe that they receive energy from the shrine due to the leftover energy from the creation of Japan. As well as Izanagi Shrine, there are other historical sightseeing spots on Awaji Island, such as Honpukuji Temple and the Sumoto Castle Ruins. You can see these places at 1:50 in the video. History and Nature on Awaji Island Photo:Naruto Strait If you're looking for a nature-filled seaside destination, you'll want to see Eshima Island (絵島 Eshima), with its beautiful rocky surface, and the majestic Kamitategami Rock created by mother nature. They're shown at 1:41 in the video. We also recommend Awaji Hanasajiki Park and the Island’s campsites, where you can see superb views of the natural landscape. While you're at it, experience a traditional Awaji Puppet Joruri performance. This can be seen at 2:23 in the video. When it comes to Awaji Island, you can't leave the island without seeing the whirpools! The sea between Tokushima and the island has a very fast current. This causes the whirlpools seen at 0:53 in the video. We recommend that you shop for souvenirs at Roadside Station Uzushio (道の駅うずしお, ichinoeki Uzushio) and go out to see the whirlpools on one of the whirlpool cruise ships. Dining at Awaji Island Source :YouTube screenshot Awaji Island, rich in nature, is a place where you can enjoy both the bounty of the land and of the sea! After sightseeing, stay at an Onsen hot spring inn by the sea and try some seafood dishes such as Tiger Pufferfish and Awaji Beef. Tokyo has several Japanese restaurants where you can enjoy exquisite dashi tamagoyaki, baked by superb omelette artisans. Let’s delve into the secrets of the delicious taste of tamagoyaki, an ever-popular Japanese gourmet specialty. As introduced in this video, Tsukiji, a well-liked tourist spot among foreign travelers, boasts numerous tamagoyaki shops side-by-side, which offers a good view of what the preparation and cooking of these omelettes is truly like. You can also enjoy these piping hot tamagoyaki omelettes cooked before your eyes by sticking them on a skewer and eating them on the spot. The Appeal of the Traditional Japanese Food, Tamagoyaki Photo:Tamagoyaki Ever since olden days, Japanese dining tables have been host to meals with fluffy omelettes thick-grilled to perfection and eaten with delight. Tamagoyaki is, indeed, a beloved menu item that has captured the hearts of people from all generations. The Tokyo metropolitan area is home to an enormous number of shops and restaurants selling high-grade tamagoyaki elaborately prepared with carefully selected ingredients. It can also be said that tamagoyaki, handled and cooked by craftsmen at lightning fast speed, is yet another undeniable part of Japan’s unique culture. Source:YouTube screenshot The Amazing Skills of Tsukiji Yamachou's Tamagoyaki Chefs One unique aspect of dashi-rolled omelettes at the long-established tamagoyaki shops in Tokyo is that you can appreciate the delicious taste of tamagoyaki's ingredients as well as the melt-in-your-mouth texture. It’s a joy just to see the near-supernatural skill of the artisans at the prestigious Tsukiji Yamachou as they use their square frying pans to roll their omelettes into a succulent shape. The storefront, which allows for observation of this amazing omelette cooking spectacle, has virtual lines of customers wanting a taste of tamagoyaki at its freshly baked best. Check Out the Recipe for Tsukiji Yamachou's Tamagoyaki! As was just mentioned, tamagoyaki from Tokyo's specialty restaurants is characterized by how they're cooked with square frying pans. The omelette artisans in this video use great finesse to prepare their tamagoyaki with as many as three frying pans going at one time! These culinary experts create their omelettes solely with eggs, dashi soup stock, and mild soy sauce, without the use of any unnecessary ingredients or seasonings. The tamagoyaki preparation process starts by mixing in an ample amount of dashi stock and seasonings into the egg liquid, which is then poured into the frying pan in a few gradual batches. An important point in making delicious tamagoyaki is that it’s rolled with impeccable timing. Tamagoyaki at specialized shops is deliberately and diligently prepared, so that customers may enjoy its fluffy texture to their heart’s content. Those viewing this video may want to pay careful attention to the tamagoyaki-baking techniques of the pros seen here, so that you can try to emulate them in your own home!
