Brewed using ALE yeast commonly used in beer production, its top-fermenting character keeps contact between the liquid surface and air to a minimum, producing a fruity, richly aromatic, and deep flavor. In-bottle secondary fermentation allows the lees’ main component, yeast, to self-breakdown into amino acids and peptides, adding depth and broader taste to the cider.
