Warm comfort food! Introducing the local dish obukko✨
Obukko is a hearty country-style miso simmered udon packed with vegetables. Also called “bukkomi,” “buchikomi,” or “obukko,” its name is said to come from the practice of tossing whatever seasonal vegetables you have into the pot. This regional stew features Shinshu miso broth with flat noodles, roughly cut daikon, carrots, green onions, pork, dried tofu, fried tofu pockets, and plenty of seasonal vegetables in a simmered udon style.
