Hello! This is Waraji, a Koshu local cuisine restaurant. Although February marks the arrival of spring on the calendar, Shosenkyo Gorge is wrapped in crisp, cold air and offers the clear winter scenery unique to the season❄️🌿 After a walk taking in the majestic nature formed by rocky cliffs and evergreen trees, why not rest with us for a while😊 Our recommendation is a piping-hot freshly fried tendon (tempura rice bowl)🍤 We generously use three large prawns; their crispy, fragrant batter pairs perfectly with the fluffy rice. Its impressive appearance makes it a dish you’ll want to photograph📸✨ The interior offers a calm space warmed by wood accents. You can warm up your chilled body and enjoy a leisurely time with us over tea🍵 Shosenkyo Gorge is still quite cold, so please make sure to dress warmly before you come🧣 We sincerely look forward to welcoming you😊

Hello, this is Waraji, a Koshu local cuisine restaurant. 😄 September is drawing near mid-month, but the late summer heat remains strong and the sun is intense. ☀️ Even so, Shosenkyo Gorge is wrapped in clear air, making it a season to enjoy nature’s beauty. Near our shop, the Crystal Fountain sprays glittering mist and offers a cool, refreshing sight. It’s the perfect soothing spot for this time when summer’s traces still linger. 💧✨ At Waraji, our craftsmen carefully prepare each eel by cleaning, steaming, and grilling it until it turns fragrant, and we serve it as a traditional unaju box. The aroma of our secret sauce whets the appetite, and once you taste it, you’ll want it again—our proud specialty. By the entrance, the seasonal hibiscus (mukuge) blooms beautifully, making it a lovely walk after your meal. With nature, flowers, and delicious food, we hope to refresh both your body and spirit. 🌸 We sincerely look forward to welcoming you.

Happy New Year 😄 This is Washaji, a local Kosh u dish. This year’s zodiac sign is the Snake 🐍 People believe carrying a snakeskin wallet or keeping a snake’s shed skin in your wallet brings better luck with money, and the white snake is especially thought to be auspicious for financial fortune. In this Year of the Snake, which is linked to good fortune, visiting Kanazakura Shrine for the first shrine visit of the year seems likely to boost your money luck even more! Our top recommendation is, without a doubt, unajuu (grilled eel over rice)! The unajuu made by our experienced chefs is truly delicious. The five varieties of houtou on offer each had their own distinctive flair, and every one was superb! Which houtou was your favorite?

Hello, this is Waraji, a local Koshu cuisine restaurant. Even though the rainy season hasn’t officially ended, hot days keep coming one after another. Since more rainy days are expected, please watch your step when visiting Shosenkyo Gorge. Our original Waraji summer-only menu item, Three-Color Somen, has started again this year! The plum, egg, and matcha flavors whet the appetite, and the firm texture and smooth, slippery finish of the noodles are superb. The crispy tempura and the light, juicy char grilled iwana (Japanese char) that come with the somen are Waraji’s recommended specialties. Please enjoy the Three-Color Somen, which you can eat in a single, refreshing slurp.

Creative Local cuisine "Chiba-san" What is Mr. Chiba...? This dish was devised based on the "sanga-yaki" in which fishermen in Samukawa, Chiba City, who supported Edo-mae, roasted fish caught on a boat with condiments and miso paste. Tataki, which is made by cutting ingredients such as fish and meat into small pieces, adding miso, green onions, large leaves, and ginger and pounding them with a knife, and "Namero," which is further finely pounded and eaten raw, is a creative local cuisine created by adding additional ingredients and cooking methods. When you come to Chiba City, please enjoy the "Chiba-san" created by famous restaurants in Chiba City with their unique personalities and ideas! < is a local fisherman who grills Tradition> At the end of the Edo period, fishermen's boats in Samukawa used to cook the fish they caught on board for a meal. Soy sauce spills out, so the seasoning was exclusively miso. It is said that the origin of "sangayaki" is a dish tataki made by pounding the caught fish with condiments and miso, dipping it in the back of the shamoji and roasting it over a fire. These dishes, which were invented by the fishermen of Samukawa who wanted to deliver the fish they caught to Edo while they were still fresh, out of the need for on-board cooking, are a valuable culture that tells us that Chiba supported "Edo-mae". Arrangement Currently, you can eat torimeshi at several restaurants such as drive-ins and restaurants in Bibai City, but even if the general method of cooking chicken and rice together is the same, the seasoning and detailed recipe are different. Its roots come from the fact that farmers who settled in the reclamation of Hokkaido raised chickens to supplement their livelihood and began to use the precious chickens as hospitality dishes. Rice, stir-fried meat, and motsu are cooked with soy sauce, sugar, and sake, and the rice crumbs soaked in the extract shine a glossy candy color. Because it uses almost no other ingredients or seasonings, it has a strong chicken flavor in both aroma and taste, and has a unique personality that is different from other mixed rice. In Nakamura-cho, a rural village located along the Ishikari River in Bibai City, farmers' mothers continue to inherit this tradition and continue to cook traditional torimeshi without additives every morning in order to protect and spread the local taste. Torimeshi, which has become a staple for Bibai residents, is sold not only at homes but also at several restaurants and supermarkets in the city, and it is one of the pleasures to compare the flavors of the local area.
