Across the street from the school is Koujiya Hachioji, a store specializing in rice koji. Rice koji is rice malt, which is made by propagating fungi on cooked rice, and is used in a variety of Japanese dishes. It was very cold in Hachioji today, so I ordered a rice koji smoothie (hot). The gentle sweetness made my cold body feel warm and refreshed. In Japan, both adults and children often drink amazake, which is made from rice malt, in winter. When I tell this story to foreign students, they are surprised and say, "Children drink sake, too? They are surprised. Amazake is sake, but some amazake is alcohol-free. Please give it a try.
学校の向かいに米麹を専門に扱っているお店「こうじや八王子」があります。 米麹は、炊いた米を発酵させたもので、日本料理のさまざまな料理に使われています。 今日の八王子はとても寒かったので米麹のスムージー(ホット)を注文しました。 やさしい甘さで冷えたからだがぽかぽかになりました。 日本では大人も子どもも米麹を使った甘酒を冬によく飲みます。 留学生にこの話をすると、「子どももお酒を飲むのですか!」と驚かれます。 甘酒は「酒」ですが、アルコールがないものもあります。 ぜひみなさんも一度試してみてくださいね。
