[Shimanto City, Kochi Prefecture] Only in Shimanto City!! “Salt-Seared Bonito” (Part 2) Following Part 1, Part 2 introduces recommended ways to enjoy the bonitos seared in Shimanto City that you can taste only here. 〇 Nakamura’s one-and-only “Traditional Salt-Seared Bonito” When people think of delicious food from Kochi Prefecture nationwide, the first thing that comes to mind is the seared bonito. Sprinkling salt or pouring sauce before searing is said to be a food culture unique to Kochi. Yet within the same prefecture, the style in central Kochi City differs greatly from that in Nakamura in the southwestern Shimanto City: Nakamura’s salt-seared method stands apart. Around Kochi City, the dish is a simple one of just sprinkled salt. In Nakamura, by contrast, chefs marinate the seared fish with proud house sauces featuring salt, vinegar, citrus juice, and other flavoring, letting the flavors meld. Nakamura’s traditional salt-seared bonito piles on heaps of condiments—onions, garlic and more—until the fish is nearly hidden. Those generous toppings don’t just look appetizing; they make nutritionally balanced combinations, so the dish is also excellent as a healthy choice. Nakamura’s traditional salt-seared bonito, found only in Shimanto City, carries an unshakable local food culture and history. Each restaurant crafts and serves its own proud version of this delicious salt-seared specialty. From the searing process to the way it’s eaten, the condiments and the sauces, every establishment applies its own ingenuity and care to its salt-seared bonito. In Shimanto City, you can enjoy as many distinctive salt-seared styles as there are restaurants. Would you like to go on a salt-seared tasting tour in Shimanto City and sample Nakamura’s traditional salt-seared bonito? 〇 Perfect match for salt-seared bonito: Shimanto Bu-chu Highball A perfect companion to Nakamura’s traditional salt-seared bonito is the Shimanto Bu-chu Highball, made with the locally grown “forbidden fruit” bushukan. It’s a standard menu item at izakayas in Shimanto City. The drink is ultra-refreshing from first sip to finish, with a crisp citrus flavor and a pleasant, moderate bitterness. Popular with both men and women, it pairs beautifully with food. Try Shimanto Bu-chu Highball with salt-seared bonito—you’ll likely get hooked after one sip. 〇 Shimanto-grown “forbidden fruit”—the bushukan Why call it the forbidden fruit? Bushukan is related to yuzu and sudachi but is an entirely different fruit. Once you taste it, ordinary vinegar-citrus fruits won’t satisfy—you’ll understand why it’s called the “forbidden fruit.” Its defining features are a clean, sharp acidity and a uniquely refined aroma. That elegant scent and tartness bring out the best in ingredients from mountains, rivers, and sea. Beloved by citrus fans across Kochi, the “kingdom of sour citrus,” bushukan has long been nicknamed the “king of sour citrus.” Beyond its flavor, the tree is very vigorous: once it bears fruit, it will yield abundantly each year from late August through early October with little care. While most citrus trees live for several decades, bushukan remains healthy and productive for over a hundred years. Bushukan is also resistant to disease and pests and grows vigorously without heavy reliance on pesticides, making it a safe, reliable crop. This rare bushukan grows only in Shimanto City and is not shipped widely across Japan—why not come taste it for yourself? How did you find this? Perhaps the appeal of salt-seared bonito and bushukan has whetted your appetite. Please enjoy salt-seared bonito and a Shimanto Bu-chu Highball when you visit Shimanto City.

[Shimanto City, Kochi Prefecture] You can only eat this in Shimanto City!! "Salt-Seared Bonito" (Part 1) When you think of delicious food from Kochi Prefecture, the first thing that comes to mind nationwide is the seared bonito known as "katsuo no tataki." Katsuo is a famous specialty of Kochi, and as everyone knows, it actually has two peak seasons! In this piece about the katsuo beloved by Kochi residents, Part 1 explains the timing and characteristics of each season, and Part 2 will cover recommended ways to enjoy it that you can only taste in Shimanto City. 〇 The seasons of katsuo: hatsugatsuo and modorigatsuo Katsuo is a well-known specialty of Kochi, but its name changes with the fishing season (peak season) to "hatsugatsuo" or "modorigatsuo." Here we introduce these two types of katsuo with different names, describing each season, their characteristics, and Kochi-specific recommended ways to eat them. 〇 Light-flavored hatsugatsuo! Hatsugatsuo, loved since long ago as one of spring’s seasonal ingredients, originally referred to katsuo landed at the start of the year, as suggested by the prefix "hatsu" (first). In recent years, however, the term has come to mean katsuo landed from spring into early summer. Juvenile katsuo hatched from eggs ride the Kuroshio Current northward around spring to seek food and grow into adults. Katsuo landed during this northward migration are called "hatsugatsuo," also known as "noborigatsuo." The exact landing locations vary, but in Kochi the season runs mainly from spring to early summer (around March to May). Young, fast-growing hatsugatsuo have translucent red flesh, a clean, springy texture, and a firm bite. They have less of the characteristic katsuo aroma, making them easy to eat even for those who are not fond of strong fishy smells. Because hatsugatsuo is low in fat and light in flavor, it’s recommended to serve it as tataki together with the fatty skin. This is the season for the Nakamura-style salt tataki enjoyed with plenty of condiments. We will introduce Nakamura-style salt tataki in the next article, "Salt-Seared Bonito You Can Only Eat in Shimanto City!! (Part 2)." 〇 Rich-flavored modorigatsuo! On the other hand, the katsuo that migrated north in search of food reaches southern Hokkaido, where falling water temperatures prompt them to head south again in search of warmer waters. Katsuo landed during this southward migration are called "modorigatsuo." In Kochi, the season is around autumn (September to November). Because modorigatsuo feed heavily and are landed after growing large, they are rich in fat and are also called "toro katsuo" or "abura katsuo." They have long been cherished as an autumn ingredient. The flesh of a large modorigatsuo is deep crimson in color, with fatty, pale areas near the skin and a rich, chewy flavor. How was that? Are you starting to get curious about katsuo? In Part 2, we will introduce the salt-seared katsuo you can only taste in Shimanto City!

Hello, this is Waraji, a Koshu local cuisine restaurant. 😄 September is drawing near mid-month, but the late summer heat remains strong and the sun is intense. ☀️ Even so, Shosenkyo Gorge is wrapped in clear air, making it a season to enjoy nature’s beauty. Near our shop, the Crystal Fountain sprays glittering mist and offers a cool, refreshing sight. It’s the perfect soothing spot for this time when summer’s traces still linger. 💧✨ At Waraji, our craftsmen carefully prepare each eel by cleaning, steaming, and grilling it until it turns fragrant, and we serve it as a traditional unaju box. The aroma of our secret sauce whets the appetite, and once you taste it, you’ll want it again—our proud specialty. By the entrance, the seasonal hibiscus (mukuge) blooms beautifully, making it a lovely walk after your meal. With nature, flowers, and delicious food, we hope to refresh both your body and spirit. 🌸 We sincerely look forward to welcoming you.

Roro Kurofune, a confectionery about a 10-minute walk from Izukyu-Shimoda Station, has just won the top prize at the National Confectionery Expo °˖✧◝(⁰▿⁰)◜✧˖° The award-winning item is the Kaikoku Caramel Monaka. It’s a personal favorite of mine: homemade caramel densely packed with walnuts delivers an irresistible bite. I highly recommend it for anyone puzzling over souvenirs ✨ Although they are wagashi artisans, Roro Kurofune also creates sweets with a Western feel, and they offer seasonal limited items that make you want to keep coming back. Another must-try is the wasanbon pudding. Also fun is the Kuro-Mona, where you inject sweet bean paste into a crispy monaka shell yourself (the paste is added just before eating so it stays crunchy), and bite-sized cookies dusted with wasanbon sugar called "Koko Shimoda"... the recommendations never end 💦 The shop is lined with many other confections (≧▽≦) When you visit Shimoda, please stop by and discover your own Roro Kurofune sweets!

When Kasai was a child, his grandmother often bought Tokyo Bakery bread for him. So for him, this is the bakery that helped raise him—a place he feels free to claim as his own, haha. The bakery has been around for about 70 years. Remarkably, it even offers a bread reservation shelf where customers can reserve loaves. I had rarely heard of a bakery reservation system, so I was truly surprised. The shelf held many reserved items, showing just how popular the shop is. Your favorite loaf definitely needs a reservation 🥖 Glutton Kasai’s recommendations are: pain de mie, cheese baguette, bacon-cheese baguette, karashi mentai baguette (spicy cod roe), crunchy peanut baguette, an-butter baguette (red bean and butter), coarse-ground pork roll, pizza bread, burdock salad bread, fresh cream bread, Danish bread, cream doughnut, curry bread, deluxe frankfurter, an-doughnut (sweet red bean doughnut), angel bread, banana sandwich, and all types of sandwiches. Sorry… my love for Tokyo Bakery is so strong that I ended up recommending everything I’ve eaten. Right now, I’m secretly aiming for the “Parisien”!!! Find out what that bread is like when you visit 🎶 It sounds like a bread fit for a foodie. I want to hog the Parisien all to myself, haha—I might even dream about it 🤤 Tokyo Bakery’s loaves truly have an incomparable chewy texture!!! I can boast that, of all the breads I’ve eaten in my life, theirs are the chewiest. Is it a True Sleeper? Maybe not, but it’s that chewy, haha. Fans of chewy bread must try Tokyo Bakery 🥖 Glutton Kasai gives this bakery his highest recommendation! Please come and enjoy it 🎶 ◎ Tokyo Bakery 📍 Suwa City, Kowataminami 14-10 ☎ 0266-52-1299 ◎ Hours: 07:30 - 18:30 ◎ Closed: Sundays and national holidays ◎ Parking: About 10 spaces (including shared spaces with the neighboring boutique). The Tokyo bakery! This is glutton Kasai’s favorite bakery ever!!! The shop is so close to our office, and their bread has a wonderfully springy, chewy texture. Around 35 years ago, my grandmother bought my brothers and me sandwiches and breads from here. We loved them. They helped raise us to be big eaters! First of all, I was amazed by the bread reservation system. Have you ever heard of reserving bread? It’s wonderful! When I visit bakeries I often can’t find my favorite loaf and end up choosing something else, so a reservation system is perfect for me. There is a “bread reservation shelf,” and it was full of reserved breads. So nice! My recommendation at Tokyo Bakery? Absolutely everything!!! I promise you’ll be satisfied. I’m currently aiming for the “Parisienne.” It even appears in my dreams!! Hahaha! Their bread is like a spring bed—soft and springy. I want you all to try it!!! Gluttonous Kasai’s top-recommended bakery! ◎ Tokyo Bakery ● 14-10 Kowataminami, Suwa City ☎ 0266-52-1299 ◎ Opening Hours: 07:30 - 18:30 ◎ Closed: Sundays and national holidays ◎ Parking: Approximately 10 cars

Kumamoto Kikuchi Tourist Association
Jul. 12, 2025
Kikuchi Tourism Association offers bicycle rentals. Recently, more people have been using them. This time, we introduce the popular destination, Kiki Castle. Kiki Castle is a mountain fortress built by the Yamato government in the late 7th century, about 1,350 years ago. A prefectural excavation uncovered valuable remains, including the foundations of 72 buildings, a former reservoir, and earthwork embankments. You can also see reconstructed buildings on site. At Onko Soseikan, exhibitions and videos explain Kiki Castle’s history and structure in detail. Excavations have continued since fiscal 1967 to the present. In terms of area, the site is about 12 times the size of the Tokyo Dome. The grounds are very spacious, making them ideal for a walk. Our staff actually visited by electric-assist bicycles. We reached Kiki Castle from Kikuchi City Furusato Sosei Citizen Plaza in about 20 minutes. There are some slopes, but electric-assist bicycles make riding easy. On the site is a café called Kuri to Sora that sells sweets made with Japanese chestnuts. The Mont Blanc soft-serve is especially popular. Please stop by the café to relax during your trip. You can enjoy scenery you don’t usually see. When you visit Kikuchi City, please enjoy a bicycle journey.

Today, June 16th, is "Japanese Sweets Day"! Introducing Japanese sweets and famous confectionery originating in Shobara City, Hiroshima Prefecture. (1) Milk Dango ・ Nostalgic taste that has not changed since the old days A Commitment Gastronomical delicacies made by mixing mochi powder, sugar, Water candy, honey, etc. on a milk base without using a single drop of Water. The nostalgic taste that has not changed since ancient times is popular. Milk Dango is manufactured and sold by Izumi Kowado, a long-established Japanese confectionery store located in Shobara City in northeastern Hiroshima Prefecture. It was released in Showa 9, and since winning a prize at the National Confectionery Grand Competition, it has won numerous honors in various places. It is no exaggeration to say that Shobara's Souvenirs are milk dango, and they have been loved for a long time as a front line. Please enjoy such milk dango as an accompaniment to Tea and danran. (2) Onbashi ・ Famous confectionery raised in Tojo Town that reminds me of Teishaku Gorge Enjodo's "Male Bridge" is derived from the natural bridge "Male Bridge of Teishaku Gorge" in Tojo Town, Shobara City. It is a two-layered confectionery reminiscent of a stone bridge. Underneath, moist cookie dough. On top is a sweet Famous Confectionery raised in Tojo Town with caramel and almond slices on top. At Enjodo, the best Ingredients are carefully selected and examined, and we try to bring out the original taste of confectionery by kneading techniques without using any [artificial synthetic coloring], [chemical synthetic preservatives], [additives such as bleach], etc. (3) Takeya Manju ・ Gentle taste that has continued since the Edo period Shobara City Tojo is proud of its Famous Confectionery of Takeya Manju. Takeya Manju Honpo started making buns in the Edo period. Since its founding, its signature products have been Sake Manju and Takeya Manju made with koji. Sake Manju is made from sake with clean water, and even if you take a bite, it has a gentle taste that you can't think of as a Sake Manju. Since it does not use additives, it can be safely eaten by children and the elderly. (4) Hibagon egg ・ A unique famous confectionery bearing the name "Hibagon" Famous confectionery "Hibagon no Tamago" created by love for the Township. In 1970, when Hibagon was spotted, the confectionery shop "Daikokudo" released "Hibagon Manju". Then, in 2003, I heard rumors of a merger Town/Village city due to the influence of the great merger of the Heisei era, and Squid I thought that "Hibagun" might disappear, so I developed and released "Hibagon no Tamago". It is a three-layered confectionery that imitates an egg consisting of "shell", "white meat", and "yolk". The "shell" consists of cocoa flavor, the "white meat" consists of white bean paste with condensed milk, and the "yolk" consists of yellow bean paste with sweet potato. Along with the appearance, the taste is also very popular. (5) Tabusa Yokan ・Yokan made in the town of Soryo with an elegant taste Carefully selected Hokkaido azuki beans are luxuriously used and carefully made over two days, and the original taste and aroma of azuki beans are brought out with delicious water unique to the countryside. "Taso" is the old place name of the current Soryo Town, and in the Showa era, it was merged with the neighboring Ryōkeson Village to become the Soryo Town, and the place name of Taso disappeared. Tagan Yokan is a confectionery that retains its ancient place name, and is a signature product with a history of more than 130 years, and is a traditional Famous Confectionery.
