Kintai Bridge in Iwakuni City, Yamaguchi Prefecture, Spring scenery. Suwa Karin-no-Ki Bakery — committed to using domestic wheat and additive-free dough (Karin = quince tree) On this day, foodie Kawanishi visited Suwa Karin-no-Ki Bakery. The owner opened the shop in May 2012 with a strong desire to make bread that even infants and young children can eat safely. The dough is made from carefully selected Hokkaido wheat and is free from preservatives, artificial colorings, and additives. Ingredients include: eggs from chickens raised at the foot of Mt. Yatsugatake; Jersey milk from cows on the Nobeyama Plateau; additive-free sausages and bacon that bring out the meat's natural flavor; and Hokkaido wheat such as Haruyutaka. About 25 varieties of bread — including seasonal specialties — are usually available. When I visited around 2:00 PM many items were already sold out. The owner recommends their most popular Batard, best enjoyed dipped in olive oil. I tried a rare matcha-flavored melon-pan and a melon-pan rusk. The large, hearty oat cookies, similar to American-style cookies, were sold out that day but are excellent when available.
