The Jonamagashi of Kanazawa, Ishikawa Are Works of Art! A Look at the Confectioneries That Express the 4 Seasons of Japan - A Feast for the Eyes and Mouth!

Jonamagashi - A Popular Japanese Sweet From Kanazawa, Japan This video, titled "Jonamagashi: Kanazawa Food Culture, Seasonal Japanese Sweets|nippon.com" (上生菓子:四季を彩る金沢の菓子文化| nippon.com), was created by "nippon.com." Kanazawa City in Ishikawa Prefecture was a castle town of the Kaga domain during the Edo Period, and the traditional Japanese sweets produced here are some of the best in Japan, on par with those produced in Kyoto (京都府) and Matsue, Shimane (島根県松江市). There are three main types of Wagashi (traditional Japanese sweets): Higashi (干菓子), Namagashi (生菓子), and Jonamagashi. Of these three types of wagashi, Jonamagashi is thought to have played an integral role in the development of tea ceremony culture in Japan. Kanazawa is a city steeped in culture and history, second only to Kyoto in Japan, and has a tradition of producing high quality, artistic Jonamagashi famously decorated with gold leaf. A high level of skill is required to make Jonamagashi, which is what makes them so special amongst Japanese sweets. They are a confectionary that appeals to all five senses and are a great way to celebrate the changing of the seasons. The History of Jonamagashi and Tea Ceremony Photo:Tea Ceremony Tea ceremony in Japan dates back to the Azuchi-Momoyama Period when it was systematized by Sen no Rikyu (千利休) who is considered the founder of tea ceremony. It wasn't until the 1,700's, during the genroku portion of the Edo Period, that tea ceremony really spread throughout the rest of Japan, and Kanazawa is thought to be the birthplace of Noto (能登) Jonamagashi. Tea ceremony is held based on a particular theme, and the tools used vary depending on the chosen theme. This is called "dougugumi" (道具組). Wagashi are carefully selected and only those which complement the tools used in tea ceremony are chosen. This is also taken into consideration when creating Jonamagashi, resulting in a variety of beautiful shapes and designs. Artisan wagashi makers must channel all of their skills into the creation of one type of wagashi. You can hear Ishikawa Prefecture Tea Ceremony Association representative Sosui Oshima (大島宗翠) speak more about the subject from 0:54 in the video. How To Make Jonamagashi Source :YouTube screenshot Second generation wagashi maker Hironobu Yoshihashi of the well-established wagashi store "Yoshihashi" (吉はし), which has been in business for over 70 years, is featured in the video from 1:17. Enjoy watching the skilled hands of the artisan wagashi makers. Since Japan has a very warm and humid climate, a high proportion of sugar is necessary to preserve the wagashi. However, in the past, sugar was a luxury product that could only be afforded by the rich and wealthy. A great deal of thought and care is put into the taste, texture, design and feel of Jonamagashi. Jonamagashi are often referred to as the ultimate wagashi, with an extremely high level of artistic quality. From 1:58 in the video, you can take a look at Jonamagashi which have been designed to represent each month of the year. Summary of Kanazawa's Jonamagashi Source :YouTube screenshot From 0:45 in the video, you can see "Ajisai" (紫陽花), the most famous Jonamagashi. This is one of the items available for purchase at Kanazawa's wagashi store, "Yoshihashi". You can purchase Jonamagashi from Yoshihashi by ordering online before visiting the store. Beautiful Jonamagashi from the wagashi store Yoshihashi are the perfect souvenir to take home from your trip to Kanazawa! Jonamagashi are also a great way to enjoy the changing seasons, a treat which is pleasing for both the eyes and taste buds! -

The area was known as Aizu until the Edo period (1603-1868) and it's a sightseeing spot with many charms. In Shimosato, there's a mountain in the direction of the rising sun where the gods are said to rest. You'll also find Kannon-numa Forest Park at the foot of the mountain, which can be seen from 2:39 in the video. A Tour That Connects the Past and Present Photo:Ouchi-juku in autumn, Shimogo, Fukushima The history of Aizu was a series of turbulent events that were swallowed up by the swell of Japan's modernization. It's said that after the Meiji Restoration, the Aizu clansmen were forced to move to an undeveloped area called Nakatsuma, where they established Minami Aizu. The traditions such as the Hange Festival and Ouchijuku Snow Festival shown from 3:18 in the video, were handed down from their ancestors. Shimogo is a town where ancient Japanese culture and traditions remain and where the present meets the past. Fukushima is best visited during winter as the snowfall in the region creates beautiful landscapes. There is an event called "Mizuki-no-hana-dango" (みずきの花団子) during Little New Year. It is an event to pray for health and longevity and colorful dumplings are stuck into the branches of trees that haven’t yet sprouted. This is a unique Japanese custom in Aizu to enjoy the long winter. This can be seen from 3:33 in the video. Sightseeing Information for Shimogo Photo:Shimogo, Fukushima, To-no-Hetsuri The beautiful scenery of the nature-rich town of Shimogo has always amazed the tourists who come to see it. Also, the buckwheat fields of Sarugaku Plateau is a place where Aizu clansmen lived through the turbulent times of Japan from the end of the Edo period to the Showa period. These can be seen at 2:12 in the video. The Aizu Line is a popular line with direct access to the Tokyo metropolitan area and is full of peaceful views. From 2:07 in the video, you can see mountain cherries in Toaka, and at 3:51the Nakayama Snow, Moon, and Fire Festival, where igloos and lights decorate a snowy Aizu. There are many popular sightseeing spots in Shimogo, Fukushima, including a snowshoe experience which is filled with the wisdom of Fukushima's ancestors who have lived through the harsh winters. The Food Culture of Shimogo, Fukushima Photo:Minamiaizu's local cuisine, Shingoro The Aga River, a quiet, clear stream flowing through Shimogo, is an important river that nurtures abundant life and is necessary for preserving the local culinary culture of Aizu. Upstream, there are many hot spring hotels and inns where you can enjoy a steamy atmosphere. You can relax at hot springs such as Yunokami Onsen after a long day of sightseeing. Fukushima is also famous for rice production. Shingoro is a local delicacy of Shimogo. It's made by rolling up a special type of rice, sticking it on a skewer, coating it with Junen (a kind of egoma) miso, and grilling it over charcoal. At the roadside station and Shimogo Town Local Products Center, you can find a different kinds of souvenirs of local food, such as soba noodles and local sake. Summary of Shimogo, Fukushima Photo:Shimogo, Fukushima The spirits and thoughts of the Aizu clansmen who lived through the turbulent times in Japanese history can still be found in Shimogo. The chef from the Okonomiyaki stall introduced in the video, is a full-fledged pro when it comes to making large amounts of Hiroshima style and Kansai style Okonomiyaki. Many customers gathered to see the outstanding performance, attracted by the delicious smell of the Okonomiyaki. Besides the incredible performance, the reason why Okonomiyaki is so popular is because of the relatively low prices and the filling nature of the delicious snack. Many people are impressed by the amazing performance of making Okonomiyaki. Check out the video to see the quick hands of this chef as he prepares Kansai/Hiroshima style Okonomiyaki. The performance is quite impressive. You'll probably want to see it in person after watching the video. What Kind of Food Is Okonomiyaki? Ingredients and How It's Made! Photo:Hiroshima style Okonomiyaki Okonomiyaki is a traditional Japanese food, and has been a soul food for many people for a long time. Okonomiyaki was created in Tokyo sometime between 1926 and 1941. The recipe is very simple- You simply mix all the ingredients and cook it on a teppan (iron grill/skillet) or in a pan. Later on, the custom spread from Tokyo to the Kansai region. There are two kinds of Okonomiyaki: Kansai style (Osaka area) and Kanto style (Tokyo area). What you see in the video is called Kansai style Okonomiyaki. Kansai style Okonomiyaki is made by mixing minced cabbage and batter together and cooking it on an iron pan. However, some people make it differently by flattening the batter on the iron pan and putting the cabbage on top. Modanyaki is a different type of Okonomiyaki that involves putting noodles into the mix. Modanyaki is also very popular in Japan. The recipe is pretty simple. Use flour and water to make a batter, and mix it with minced cabbage and Yamaimo (Japanese yam). From there, cook the ingredients on the iron plate after greasing it with cooking oil, adding sliced pork, noodles, green onions, eggs, and other delicious ingredients. You can simply put whatever ingredients you like in Okonomiyaki. Some other popular ingredients are seafood, cheese, and mochi (rice cakes). Once you've finished making the okonomiyaki, season it with okonomiyaki sauce, fish flakes, and dried green seaweed. Many people prefer mayonnaise on their Okonomiyaki. The most common way to eat Okonomiyaki is to cut it in small pieces using the spatula, so that it can be shared amongst friends. For the Okonomiyaki from a festival stall (like the one in the video), use chopsticks to cut the Okonomiyaki. Takoyaki, and Monjayaki are 2 popular foods in Japan similar to Okonomiyaki. The video shows viewers the entire process of making Okonomiyaki, from greasing the iron plate, to flattening the batter and adding ingredients such as sliced pork and cabbage. One of the most impressive scenes can be seen at 1:54, when the chef flips each Okonomiyaki one by one in quick succession. He's making 30 Okonomiyaki at once! Be sure to check out the video to see a detailed look at how Okonomiyaki are made. Japan's Popular Festival Stalls! Source :YouTube screenshot No festival is complete without getting some food at a local stall. And the taste of freshly made okonomiyaki from a stall is totally different from what you'd make at home. There are actually a lot of tourists who visit Japanese festivals just to enjoy different foods and see the amazing skills of the chefs. You’ll feel the urge to visit Hiroshima’s Yunoyama Onsen Morii Ryokan after watching this video! Yunoyama Onsen: A Place Where Even the Feudal Lords of Hiroshima Have Bathed Source :YouTube screenshot Yunoyama Onsen is a natural hot spring in Hiroshima Prefecture, Hiroshima City, Saeki Ward, in the Chugoku region of Japan (中国地方広島県広島市佐伯区, Chugoku-chiho Hiroshima-ken Hiroshima-shi Saeki-ku). The waters of the hot spring, which have been flowing for generations, are known as the Yunoyama Myojin Reiken-no-yu (湯ノ山明神霊験の湯, Yunoyama myojin reiken-no-yu), and the sanatorium itself is a spiritual place where many come to worship. Yunoyama Onsen has a long history, with its waters beginning to flow in 1707, more than 300 years ago. In 1750, the Hiroshima Clan constructed the sanatorium, Yunoyama Myojinja (湯の山明神社, Yunoyama myojinja), which was later designated an Important Intangible Folk-Cultural Property of Japan. The head of the clan, Asano Yoshinaga, bathed in these waters. The Yunoyama Onsen of that time was as busy and bustling as 37 hot spring hotels, with many coming to visit. At 0:07 in the video, you can see a signboard on which is written “Hiroshima Clan Head Asano Sanatorium.” The history and origin of the Yunoyama Onsen is also recorded in Japan’s ancient history tomes. 1958 Yunoyama Sanatorium (湯之山旧湯治場, Yunoyama kyu-tojiba) was designated a Historic Site of Hiroshima Prefecture. 1972 Together with Yuki Onsen (湯来温泉, Yuki onsen), the Yuki・Yunoyama Onsen (湯来・湯の山温泉, Yuki・Yunoyama onsen) was designated a National Hot Spring Health Resort by the Minister of the Environment, and it became an exceedingly popular destination. This designation refers to hot springs which are suitable for promoting health and relaxation, with only 21 hot springs in all of Japan awarded this honor. 1974 Yunoyama Myojin Kyu-tojiba was designated an Important Tangible Folk-Cultural Property of Japan. The Yunoyama Onsen, run by Yukicho, was opened. 1991 “Yuki Yunoyama Onsen” was designated a National Hot Spring Health Resort especially suitable for the promotion of health. 1994 Kua House Yunoyama (クアハウス湯の山, Kua hausu yunoyama), run by Yukicho, was opened. Yunoyama Onsen was selected as one of the top hot springs in Japan for recuperation. The waters are unique in that they contain weak radioactive substances, and the temperature is a low 23.5 degrees celsius (74° F). The waters are effective for easing the symptoms of rheumatoid arthritis, poor circulation, mild hypertension and chronic disease. As shown in the video, there are two hotels near Yunoyama Onsen, namely the Yunoyama Onsen Morii Ryokan and the Yunoyama Onsenkan. At the Yunoyama Onsenkan, the Utase-yu (打たせ湯, Utase-yu), where water falls from an outcrop 4 meters high, is quite famous. It takes about 40 minutes from the Itsukaichi IC on the Sanyo Expressway (山陽自動車道の五日市IC, Sanyo jidosha-do no itsukaichi IC) to get there. Free parking is available. Another method is to take the bus from the Itsukaichi Station off the JR Sanyo Main Line (山陽本線JR五日市駅, Sanyo honsen JR itsukaichi-eki). The trip takes approximately 60 minutes. Constructed in 1935, more than 80 years ago, this is a hot spring area which upholds the value of “local production for local consumption.” The bath itself being a small, homely size with few rooms, this hotel is not one of those fashionable places generating buzz on travel sites. However, for the purpose of soaking up the simple atmosphere of the Showa era, and having a relaxing time, this place is the perfect getaway. There is a private onsen available for booking as well. It's introduced at 0:47 in the video. As for meals, the wild game nabe (hot pot) with boar meat purchased from local huntsmen, as well as dishes made using seasonal local produce, are popular. This is shown at 0:33 in the video. A day trip plan is available, where you can make use of the private bath as well as the rooms, with lunch provided. As for overnight stays, there are a variety of plans available, such as the provision of meals made with seasonal produce, a business plan, training camps, stays lasting for more than two nights, and more. Information About the Surroundings of Yunoyama Onsen Morii Ryokan Photo:Yunoyama doctor fish footbath Nearby Yunoyama Onsen Morii Ryokan is Kua House Yunoyama, which is equipped with water slides and an indoor hot spring pool. A hot spring meant for day trips is also available. Located in Kua House Yunoyama’s parking lot is the Kinsai Yunoyama (きんさい湯の山, Kinsai yunoyama), a farm-fresh produce delivery market. Locally-produced fresh vegetables, rice, homemade konnyaku jelly and more; there are a variety of seasonal goods available which cannot be found anywhere else. Furthermore, there is even the Yunoyama Footbath (湯の山の足湯, Yunoyama-no-ashiyu), with "doctor fish." There, you can soak to your heart’s content in the sacred waters of Yunoyama Myojinja. The facilities are open 24 hours. There is no designated fee, so all you have to do is place coins into the offering box as you see fit. As shown from 0:49 in the video, there are weeping cherry trees (枝垂れ桜, Shidare-zakura) both at the entrance of the Yunoyama Onsen as well as inside the shrine. This sight can be enjoyed throughout the four seasons. Summary of Hiroshima’s Yunoyama Onsen Morii Ryokan In Hiroshima, there are many hot spring areas such as Miyahama Onsen (宮浜温泉, Miyahama onsen), Hiroshima Onsen (広島温泉, Hiroshima onsen), Kinoe Onsen (きのえ温泉, Kinoe onsen), Ryu Onsen (龍温泉, Ryu-onsen), Megadaira Onsen (女鹿平温泉, Megadaira onsen), Kimita Onsen (君田温泉, Kimita onsen), Yuki Onsen (湯来温泉, Yurai onsen), Tomo-no-Ura Onsen (鞆の浦温泉, Tomo-no-ura onsen), Nukui Onsen (温井温泉, Nukui onsen), Shobara Sakura Onsen (庄原さくら温泉, Shobara sakura onsen), Miharashi Onsen (みはらし温泉, Miharashi onsen), and more. When visiting Hiroshima, we recommend taking a bath and relaxing in the hot springs. Although Yunoyama Onsen is not a ‘fashionable’ place by any means, what it is, is a place with rich history, and springs so amazing that even feudal lords bathed in them. Kibune Chaya, a riverside teahouse in Kibune, Kyoto This video, titled "[4K Video] [Kyoto] Kawadoko in Kibune|Kibune-jaya (streambed cuisine) Washoku (Summer in Japan)" (【4K動画】【京都】貴船の川床(かわどこ)貴船茶屋(川床料理)和食(日本の夏)), was released by "movie fine." Kyoto City boasts an immovable popularity in the ranking of Japanese tourist attractions. The summer feature of Kyoto is your ship's Kawadoko. This is a video introducing Kifune Shrine which is one of the shops where you can enjoy the riverbed of your ship.Kyoto cuisine lunch and sukiyaki are popular. From the video 0:44, attractive dishes such as fish sashimi, tempura and dessert will appear one after another, so don't miss them! What is "Kawayuka" in Kyoto? Photo:Kawadoko cuisine in Kibune, Kyoto There are four areas in Kyoto in the summer that host Kawadoko: Kamogawa River (鴨川), Takao (高雄), Takagamine (鷹峯), and Kibune (木船). Kawadoko are a place to sit near the water and cool off, and are made with Japanese style tatami flooring called "Zashiki." They are also called "Noryo Yuka" in Japanese as well. The reason why Kyoto Takafune's Kawaboko is so popular Your ship is called "Kyo no Okuzashiki" along with the nearby Mt. Kurama (鞍馬山) .The riverbed is built on the Takifune River, which flows right next to Takifune Shrine, which is famous for its power spot. Even in midsummer, your ship is about 10 degrees Celsius lower than the temperature in Kyoto City, and it is also characterized by a comfortable time. It is said that during the Taisho period, people who put floor desks in the river and washed their feet were entertained with tea and food. While listening to the murmur of the river and the sound of the waterfall, you can enjoy Kyoto cuisine mainly with carp and sweetfish. Characteristics and recommendations of "Kifune Tea House" In order to relax and enjoy the riverbed, I would prefer to avoid congestion if possible.I recommend the Takifune tea house that I am introducing to you this time. The biggest attraction of the Kawadoko at Kibune-jaya is that they don't accept large groups or tour groups. The price is reasonable as well, so it won't put a strain on your wallet either. In addition, either side of the platoform faces the river, so you can soak your feet in it. By sampling Kibune-jaya's exquisite kaiseki cuisine while feeling the clear streams of Kyoto, shown at 0:30 in the video, both your mind and body will be at peace. Access to Kifune Shrine is also quite simple. It's only a 2-minute walk from Kibune-jaya. This is another great thing about Kibune-jaya. A pick-up service is available from the nearby Kibuneguchi Station as well, so it's convenient to let them know when you make a reservation. Fireflies in Late June Photo:Fireflies The Kawadoko at Kibune-jaya is open from May to September, but we highly recommend visiting from late June to mid-July. It's also the time when the fragrant Ninose lilies bloom, and fireflies can be seen flying around the Kibune River at night. If you're lucky, they may even appear on the Kawadoko at Kibune-jaya. Kibune is also home to a number of Ryokan (Japanese-style inns), notably "Beniya." It's a good idea to stay overnight after cooling off on the Kawadoko and go sightseeing in a different area the following day. It's also the time of year when Kurama Temple is surrounded by fresh greenery and the hydrangeas are in full bloom at Sanzen-in Temple. You're guaranteed to have a great trip, as Kyoto City is home to numerous places of interest, such as Shimogamo Shrine, Heian Shrine, Nanzen-ji Temple, Ginkaku-ji Temple (the Silver Pavilion), and Kyoto City Zoo. Kibune-jaya Summary Photo:View of the Kifune River Kibune-jaya was completely destroyed by a typhoon in 2019 and is undergoing reconstruction as of September 2020. It'll be interesting to see how the new appearance differs from that of the old shown in the video at 6:06. Grandma's Osechi-ryori: Video Introduction This video, titled "Grandma's Recipes|Grandma Masami's Osechi" (Grandma's Recipes|まさみおばあちゃんのおせち), was uploaded by "Grandma's Recipes." Osechi-ryori is a traditional Japanese dish eaten on New Year's in Japan. In Japan, people are so accustomed to Osechi-ryori that many people don't know about the meanings attached to the dish. In this article, we'll take a look at traditional Japanese Osechi-ryori through the recipes of Grandma Masami who has lived through 4 Japanese eras. Grandma Masami left her parents' house at the age of 8 and began working, and she is now 99 years old. In just half of her life, she endured many hardships, including two wars, the Great Kanto Earthquake, the Isewan Typhoon, the Great Hanshin Earthquake, and the Great East Japan Earthquake. Even so, she says with a smile how she lived an ordinary life. In this day and age when it's difficult to live an "ordinary life," these words must have a very significant meaning. The purpose of these videos is to learn recipes for happiness from energetic grandmothers over the age of 80 who have lived through turbulent lives. This video focuses on Osechi-ryori, a recipe for happiness handed down by a grandma in Nagano, Japan. The History of Osechi and Its Name Photo:Osechi-ryori Osechi-ryori was originally prepared as an offering to New Year's gods during seasonal festivals, such as Sechie (an official event held at the Japanese Imperial Court on national holidays) and Sekku. It is said that it was not until the Edo period (1603-1868 A.D.) that they began to be served in stacked boxes and prepared as New Year's dishes as they are in modern-day Japan. "Osechi" is written as either "お節" or "御節" in Japanese. This naming also comes from Sekku, and the common interpretation is that the meaning is an abbreviation of Sechie. Classic and Regional Recipes for Osechi-ryori Photo:Osechi-ryori, three side dishes Although there are regional differences in osechi-ryori recipes, the basic recipe consists of three celebratory dishes (three side dishes), nishime (simmered vegetables), sunomono (pickled or vinegared food), and yakimono (grilled food). These three dishes are commonly made across Japan with black soybeans and herring roe. However, there is a difference: in Japan's Kanto region they use gomame (dried young anchovies), while in the Kansai region they use tataki-gobou (burdock root seasoned with sesame). The most common style of osechi-ryori is to use a four-tiered box containing 20 to 30 different dishes. Some of the most popular classic dishes in osechi-ryori are datemaki (a rolled omelette mixed with fish paste), kinton (mashed sweet potatoes), kohaku namasu (thinly sliced carrots and daikon radish), kamaboko, grilled sea bream, teriyaki amberjack, simmered tiger prawns, boiled clam, kombu-maki (sliced dried herring or other fish wrapped in kombu seaweed and boiled), and chikuzenni. The use of such auspicious and high-quality ingredients as sea bream, amberjack, and prawns gives the dish a celebratory atmosphere on this special day. In recent years, ingredients for osechi-ryori can be found in supermarkets after Christmas. There are many items that are nearly fully prepared, so osechi-ryori are relatively convenient to eat nowadays. The Meanings Behind Osechi-ryori Photo:Osechi-ryori, kurikinton Here are some of the meanings and hopes attached to osechi-ryori. ●Kurikinton (chestnuts and mashed sweet potatoes) In addition to its gorgeous and beautiful golden appearance, chestnuts are said to bring good luck in victory and prosperity. ●Kuromame (black soybeans) This dish is to wish for good health and the power to work another year. ●Kazunoko (herring roe) This dish is associated with wishes for prosperity of one's children. This dish is a celebratory food, and is associated with fertility. Photo:Osechi-ryori, Kombu-maki ●Kombu-maki Kombu is associated with happiness and comfort in old age. Kombu-maki, a type of kelp roll, is also used as a symbol of union and contains wishes of prosperity for one's offspring. Grandma Masami's One-Person Osechi-ryori It is becoming more and more common to have osechi-ryori delivered on New Year's Eve or New Year's Day in Japan, rather than making them at home, through commercial or online delivery services. Osechi-ryori themselves are becoming more and more varied, with Chinese, French, and even children's osechi-ryori appearing at the end of the year, rather than being solely Japanese style. The focus of this video, Grandma Masami, is now 99 years old! She lives alone, but she makes her own osechi-ryori every year. Although it looks like a simple osechi for one person, the handmade miso soup made from dried sardines, walnut rice cakes, steamed rolls, kinpira, namasu, and nishime all look delicious. Soy sauce, miso, natto, tofu, okara (soy pulp), and soybean flour. We can see that soybeans are as important an ingredient in the Japanese diet as rice. It's also an essential ingredient for making osechi-ryori. Soybeans are said to be a "kanzen shokuzai" (完全食材, a food that contains all the nutrients necessary for humans to maintain good health) with a well-balanced combination of lecithin, dietary fiber, isoflavones, protein, carbohydrates, and various vitamins and minerals. It's no exaggeration to say that soybeans are the secret to the longevity of the Japanese people. Soybeans have played a prominent role in Japanese food and the health of the Japanese people since the Heian period nearly a thousand years ago. Summary of a Japanese Grandma's Osechi-ryori While gorgeous osechi-ryori are a feast for the eyes, simple and healthy homemade osechi-ryori like Grandma Masami's recipes are also good.
