The Long Established Unagi Shop, Unagi Fujita!

This video shows eel being prepared at "Unagi Fujita," a long-established eel restaurant in Hamamatsu City, Shizuoka Prefecture.

Unagi Fujita's eel stew is made with a secret sauce that has been handed down from generation to generation for more than 50 years. The smell of the eel is removed through a process called "ikashikomi," in which the eels are allowed to swim for a week without being fed, in clean underground water.

Unagi Fujita has a Hamamatsu branch, Hamamatsu Ekimae branch, Tokyo Shirokanedai branch, and a Tokyo Toyota branch.
