Yanagiya - A Restaurant With 2 Michelin Stars Deep in the Mountains of Gifu

Yanagiya is an amazing restaurant awarded two stars in the Michelin Guide Gifu 2019, ranked number one in the country by the Japanese food review website Tabelog, and ranked number 10 on the French ranking site LaListe in 2019.
Yanagiya is a restaurant that makes local cuisine using a sunken hearth, and they don't accept customers that haven't been recommended by a regular. They also only accept groups of 4 or more through a reservation-only system.

You can enjoy fresh seasonal ingredients, such as wild vegetables in spring, river fish, such as sweetfish, in summer, matsutake mushrooms in autumn, and wild boar and bear in winter.
The owner has also studied wine extensively, and he recommends wines that are both cost effective and well matched to the gibier cuisine.

The shop is located deep in the mountains of Gifu, so if you're going by car, be careful not to get lost as there are no signs.
